Cooking a dry spice blend briefly in hot fat before any liquid goes in. Much of the flavour in ground spices is fat-soluble, so thirty seconds of stirring in hot oil does more than an hour of simmering in a wet pot. Add liquid immediately afterwards, because ground spice burns quickly at that point and burnt spice makes a whole dish bitter.

Nothing published gives a heat rating, and tolerance varies a great deal between people. The seller describes it as having a hint of heat. Taste a pinch on its own before committing a whole pot, and build up in stages rather than seasoning once at the start.
